Citrus-Ginger Grilled Chicken with Pineapple Salsa Wraps [adapted from Bon Appetit June 2004] -----Meat----- 1 lb golden brown sugar 3 C soy sauce 1 12-oz can frozen orange juice concentrate, thawed 6 garlic cloves, chopped 2 tsp ground ginger (can use fresh) 1 tsp dry mustard 5 lbs boneless, skinless chicken thighs [pork tenderloin, loin roast, sirloin steak, etc. will work] Combine first 6 ingredients in a heavy, large saucepan; whisk until sugar dissolves. Transfer 2 C of marinade to large resealable plastic bag. Add meat to bag. Refrigerate at least 4 hours (overnight good). Bring remaining marinade to a boil. Reduce heat to medium-low and simmer until thick and reduced to ~2 3/4 cups, stirring often to prevent burning, about 10 minutes. Can do this ahead and refrigerate or do before meat grilling. Drian meat, discarding marinade. Grill meat, brushing with reduced-marinade glaze. Transfer to cutting board and slice and/or chop as you like for wraps. -----Pineapple Salsa------ ~5 C chopped, peeled, cored fresh pinapple (I used 2 small, recipe says 1 large) 1/2 C chopped red bell pepper 1/2 cup chopped green bell pepper 7 Tbl sugar 2 tsp minced peeled fresh ginger 3 Tbl white wine vinegar, divided 1 Tbl lime juice Combine first 5 ingredients in heavy large saucepan. Add 2 Tbl vinegar. Bring to a boil over medium-high heat, stirring until sugar dissolves. Boil until juices reduce and thicken slightly, stirring occasionally, about 8 minutes (the juices never really thicken, I just cooked around 10 minutes). -----Beans----- 3 large cans black beans 3 Tbl lime juice (or to taste) 3-6 canned chipotle peppers (depending on how spiiiiiiiicy you want them) Salt to taste (if desired) Throw everything in a small pan and warm up before wrappage, stirring frequently. -----Other Things Not to Forget----- Some nice romaine, red leaf, or green leaf lettuce. 24+ burrito-sized flour tortillas -----Wrappage---------- Once you have all these things together (Phew!), heat tortillas individually over the stove burner. Lay that warm tortilla out, spread some beans on, throw on some meat, throw on some pineapple salsa, throw on a chunk (or chunks) of lettuce. Fold sides in and roll away from you like you know what you're doing.
